Ingredients

  • 1/8 (teaspoon) ground nutmeg
  • 2 (tablespoon) water
  • 3 (medium) apples (skin cored cut into thin strips red)
  • 1 (medium) onion (cut into thin strips)
  • 3 (medium) carrots (thin strips)
  • 1-2 (tablespoon) margarine or butter

Directions

  1. Put butter and nutmeg into a wok or large skillet medium heat.
  2. Add onion; saute for 2 to 3 minutes or until transparent.
  3. Add vegetables and apples to the wok or skillet.
  4. Carefully add water.
  5. Cover and cook over low-medium heat for 10 - 15 minutes or until apples are tender.
  6. Serve immediately.

    It's tasty and also very good for you. The carrots add a healthy dose of beta carotine to the dish and apples are high in vitamin C. It's the perfect accompaniment to pork.

    We liked this, but since my kids don't like big pieces of carrot (weird!), I just used the large side of my box grater for the carrot. Also grated a little fresh ginger in--very good!
